Easy

Agar Agar Jelly is a beloved Indian dessert, known for its vibrant colors, delicate texture, and refreshing taste. Prepared using agar agar (also called 'China grass' in India), this vegetarian jelly is a healthier alternative to gelatin-based desserts, making it suitable for those who avoid animal products. Agar agar is derived from natural seaweed and has been a part of Indian festive sweets, especially in regions like Kerala, Tamil Nadu, and West Bengal, where it’s popularly used to prepare desserts for Onam, Diwali, and Eid. The dish is light on the palate, slightly sweet, and can be flavored with rose water, cardamom, or even fresh fruit juices. Its versatility and ease of preparation have made it a staple for celebrations, family gatherings, and as a cooling treat during the hot Indian summer. Choosing agar agar jelly is a smart way to indulge your sweet tooth while keeping calories in check, making it ideal for those tracking their intake on IndianCalorie.

Ingredients(for 1 medium bowl (approx. 120 ml))

  • 5 grams Agar agar strands (China grass) (also available as agar agar powder)
  • 2 cups Water (pani)
  • 3 tablespoons Sugar (cheeni; adjust to taste)
  • 1 teaspoon Rose water (gulab jal) - optional
  • 1/4 teaspoon Cardamom powder (elaichi) - optional
  • 1/2 cup Chopped fresh fruits (mango, pomegranate, kiwi) (seasonal, optional) - optional
  • a few drops Natural food color (optional, for festive look) - optional
  • 1 teaspoon Lemon juice (nimbu ras, optional) - optional

Instructions

  1. 1

Rinse the agar agar strands well and soak them in water for 10 minutes for easier melting.

    10 minutes

Soaking ensures the strands dissolve quickly and evenly.

  2. 2

In a heavy-bottom pan (patila), add the soaked agar agar along with the soaking water. Bring to a gentle boil on medium flame, stirring continuously until the strands dissolve completely.

    8 minutes

Stir constantly to prevent the agar from sticking to the bottom.

  3. 3

Add sugar, and stir until it dissolves. Then add rose water, cardamom powder, and a few drops of natural food color, if using.

    2 minutes

Add flavors after agar is dissolved to retain aroma.

  4. 4

Switch off the flame. Let the mixture cool for 2-3 minutes. If using fresh fruits, place them at the bottom of serving bowls or moulds.

    3 minutes

Ensure the mixture is not too hot before adding fruit to prevent them from cooking.
