  • 2 tablespoons Fresh coriander (chopped (dhaniya patta)) - optional
  • 2 tablespoons Roasted peanuts (crushed (optional, for garnish)) - optional

Instructions

  1. 1

Press tofu gently to remove excess water, then cut into medium cubes. In a tawa or non-stick pan, heat half the sesame oil and lightly pan-fry tofu until golden on all sides. Set aside.

    5 minutes

Use minimal oil to keep the dish light and healthy.

  2. 2

In the same pan, add remaining oil. Sauté minced garlic until fragrant but not brown. Add spring onions (white part), carrots, beans, and capsicum. Stir-fry on high flame for 2-3 minutes till veggies are crunchy yet cooked.

    5 minutes

High heat helps retain the crunch and nutrients of the vegetables.

  3. 3

Add cooked rice to the pan. Gently mix to combine with veggies. Ensure rice grains remain separate by using a light hand.

    3 minutes

Use leftover rice for best texture.

  4. 4

Pour in soy sauce, lemon juice, red chilli flakes, and salt. Toss everything together so the rice is evenly coated with the sauces.

    2 minutes

Adjust seasoning to balance tanginess and spice as per your taste.
